bottled opinions is a collaboration by the enologist desislava hitova and sommelier yana petkova. conceived as a women's wine project, bottled opinions is a philosophy of life, discovery and boundary pushing. yana and desislava's idea is to select varietals from different vineyards around bulgaria and re- imagine them beyond the mainstream; natural, with style and vision that provoke the heart and mind. all of their wines are hand crafted with minimum intervention. this is a blend of indigenous varietals rubin (a crossing of syrah and nebbiolo) and melnick. it's medium to full bodied with ripe red and dark fruits complimented by spicy, herbal, and earthy undertones.

dimitar kostadinov is a 3rd generation winemaker in bulgaria’s thracian valley near the western coast of the black sea. the winery was started by his father and grandfather 1998, and dimitar and his wife elisabeth took over the winery in 2006. dimitar transitioned the vine cultivation to organic and dry farming in 2010. for many years, dimitar was fascinated with the idea of completely natural winemaking techniques with minimal intervention, both the technical and philosophical aspects, studying from the likes of rudolf steiner. in 2016, he began experimenting on his own, not for commercial purposes, and was overwhelmed by the response from people with whom he shared his wine. so after several years of experimenting, he decided he would share his natural wine experiments with the world. the thracian valley is in the central & south of bulgaria, and historically was covered in forest and known for rich forest soils. the zagreus vineyards are planted on these unique forest soils, which are layers of humus, cinnamon forest soil, clay, and soft limestone. this 100% mavrud is aged in stainless (no oak) and is medium plus bodied with dark cherry fruit, black pepper spice and forest floor notes. mavrud is an ancient bulgarian variety that is most often compared to mourvèdre, which is probably why we love it so much!

founded in 2020 by teona omarashvili and her uncle levan, pi is an artisan georgian winery in tbilisi producing only up to 7,000 bottles (<600 cases) annually. co-founder teona (“teko”) omarashvili learned a deep appreciation for balance from her grandmother—a pharmacist and cook who gave her small tastes of saperavi wine called "medicine" during dinner. they named nthe winery after the mathematical constant π (3.14), which symbolizes wine as an eternal constant through time and space, reflecting a continuous, unending pursuit of perfection. this 100% saperavi is full-bodied and inky with vibrant ripe black fruits, black pepper spice and chocolate notes and a long, energetic finish.

Ernő Sagmeister lis a civil engineer and mathmetician turned natural winemaker! In 2008, he purchased three distinct vineyards on the southern slopes of the Fruška Gora Mountain within Fruška Gora National Park, where the soils feature volcanic rock, limestone, and gravel. Fruška Gora was one of the best wine regions in the world in the sixteenth century, it was drunk by kings and aristocrats, and Erno is one of the winemakers rebuilding this story. This is 100% Kardarka - it's complex with roasted strawberry, baking spices, candied pecans and a subtle sherry-like oxidative complexity.
